  • Toxoplasma – is a parasite, found in the flesh of some meats. It infects a person when ingested. Millions of people carry this parasite, but experience no symptoms. It is killed during proper cooking.
  • Campylobacter – is one of the most common causes of food poisoning. However, it usually occurs as an isolated incident and not an outbreak. Symptoms can last up to 10 days and is found in undercooked poultry, raw milk and contaminated drinking water.
  • E.coli 0157 – can be deadly. Found in produce, juices, meat and unpasteurized dairy products. Symptoms can last up to a week. It can cause kidney failure as well.
  • Listeria – can last for weeks although it can also take up to 70 days for symptoms to appear. It is found in meat products, unpasteurized dairy products and produce. Symptoms include a stiff neck.
  • Clostridium perfringens – this bacterium is responsible for approximately a million cases of food poisoning every year and is common in the foodservice industry where large quantities of food are prepared and held for long periods of time. It affects meats and gravies. Symptoms usually last for less than 24 hours.

Symptoms of Foodborne Illnesses

The symptoms of food poisoning are similar regardless of which bacteria caused the infection. They can last from a few hours to about a week and vary in severity. If medical attention isn’t sort, it can result in chronic arthritis, brain and nerve damage, kidney failure, and even death. They include:

  • Upset stomach
  • Vomiting
  • Nausea
  • Diarrhea
  • Stomach cramps
  • Fever
  • Dehydration
  • Stiff neck
